This knife is specially designed for filleting fish and cutting away the tendons and fat along the legs of meat and poultry. The flexible blade of MoV steel is extremely suitable to do just that. All in all, a perfect tool for filleting and boning.
Little Fish is made of fully forged MoV steel; Mov stands for Molybdenum Vanadium an alloy which provides strength, makes the steel stainless and durable. The steel makes Little Fish a great boning and filleting knife, because of its flexibility and is extremely easy to maintain and keep sharp.
The MOV steel is processed in Japan from great tradition and is a blend of German and Japanese steel.
